White Chocolate Chip Muffins

Ingredients
- 50 g unsalted butter
- 60 g white chocolate, broken into pieces
- 1 large egg
- 30 g granulated sugar
- 80 g milk
- 120 g plain flour
- 6 g baking powder (approx. ½ sachet)
- 60 g milk chocolate chips
Instructions
- Preheat your oven to 180°C (350°F). Line a 6-cup muffin tin with paper liners or grease a specialized mold.
- Add 50 g unsalted butter and 60 g white chocolate pieces to the Thermomix bowl. Melt 3 minutes / 50°C / Speed 2. Transfer the mixture to a separate bowl and set aside to cool slightly.
- Clean and dry the Thermomix bowl. Insert the butterfly whisk. Add 1 large egg and 30 g granulated sugar to the bowl. Whisk 2 minutes / Speed 3.5.
- Remove the butterfly whisk. Add the cooled butter and white chocolate mixture and 80 g milk to the bowl. Mix 10 seconds / Speed 3.
- Add 120 g plain flour and 6 g baking powder to the bowl. Mix 15 seconds / Speed 3, or until just combined. Be careful not to overmix the batter.
- Add 60 g milk chocolate chips to the bowl. Gently fold them into the batter using a spatula.
- Divide the batter evenly into the prepared muffin cups or mold, filling them about ¾ full.
- Bake for 15-20 minutes, or until a skewer inserted into the center of a muffin comes out clean.
- Let the muffins cool in the mold for a few minutes before carefully demolding them. Transfer to a wire rack to cool completely before serving.
