Viana Cake Roll

Ingredients
- 7.5 g baking powder
- 150 g caster sugar
- 180 g plain flour
- 9 large eggs, at room temperature
- 10 g cornstarch
- 75 g caster sugar
- 70 ml water
- 8 large egg yolks
- Butter or oil, for greasing
- Extra caster sugar, for dusting
Instructions
- Preheat your oven to 185°C. Line a large rectangular baking tray (approx. 30x40 cm) with baking paper, then lightly grease and dust with a little flour.
- Insert the butterfly whisk into the clean, dry Thermomix bowl. Add the 9 room-temperature eggs and 150 g caster sugar.
- Whisk 8-10 min / 37°C / Speed 4, or until the mixture is very pale, thick, and has tripled in volume.
- Remove the butterfly whisk. Add 180 g plain flour and 7.5 g baking powder to the bowl.
- Gently fold in the flour and baking powder 10 sec / Speed 3, or until just combined. Avoid overmixing to keep the batter light.
- Pour the batter evenly onto the prepared baking tray and spread gently.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and a skewer inserted into the center comes out clean.
- While the cake is baking, prepare a clean kitchen towel by dusting it lightly with extra caster sugar.
- Once baked, immediately invert the warm cake onto the sugared kitchen towel. Carefully peel off the baking paper.
- Place 10 g cornstarch and 75 g caster sugar into the clean Thermomix bowl. Mix 5 sec / Speed 4.
- Add 70 ml water and 8 egg yolks to the bowl. Mix 10 sec / Speed 4.
- Cook the mixture 7-9 min / 90°C / Speed 3, or until thickened to a custard-like consistency.
- For the last minute, cook 1 min / 90°C / Speed 2 to settle the filling and prevent sticking.
- Transfer the filling to a clean bowl and cover with cling film directly on the surface to prevent a skin from forming. Let it cool slightly.
- While the cake is still warm, spread the slightly cooled filling evenly over the surface of the cake.
- Starting from one of the longer sides, carefully roll the cake tightly with the help of the kitchen towel.
- Once rolled, let the cake cool completely, seam-side down, wrapped in the kitchen towel or cling film, to help it hold its shape.
- Slice and serve the Viana Cake Roll.
