Vendas Novas Pork Cutlet Sandwiches

Ingredients
- 600 g thin pork cutlets
- 8 bread rolls
- 4 cloves garlic
- 1 (330 ml) white beer (lager)
- 1 bay leaf
- 3 tbsp vegetable oil
- 1 tbsp butter
- Salt, to taste
- Piripiri (chilli flakes or sauce), to taste
Instructions
- Peel the garlic cloves. Place them into the clean and dry Thermomix bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl.
- In a large bowl, combine the pork cutlets, chopped garlic, bay leaf, white beer, salt, and piripiri. Mix well to ensure the pork is coated. Let marinate for at least 30 minutes (or longer in the refrigerator).
- Empty and clean the Thermomix bowl. Add the vegetable oil and butter to the bowl. Heat 2 min / 120°C / Speed 1.
- Add the liquid from the pork marinade (reserving the pork cutlets for later) to the Thermomix bowl. Place the simmering basket on the lid instead of the measuring cup to allow for evaporation and prevent splattering. Simmer 7 min / 100°C / Speed 1.
- Add the marinated pork cutlets to the Thermomix bowl. Cook 10 min / 95°C / Speed 2 / Reverse.
- Pause the Thermomix. Scrape down the sides and bottom of the bowl with the spatula to ensure even cooking. Check the thickness of the sauce and add a splash of water if it seems too thick.
- Continue cooking 8 min / 95°C / Speed 2 / Reverse. For the last 2 minutes, reduce the temperature to 90°C to settle the sauce and prevent sticking: 2 min / 90°C / Speed 1 / Reverse.
- Carefully remove the cooked pork and sauce from the Thermomix bowl and set aside. Cut the bread rolls in half. Drizzle the inside of the rolls with some of the cooking sauce, then fill generously with the pork cutlets.
- Serve immediately, garnished as desired.
