Velvety Chestnut Soup

Ingredients
- 300 g roasted chestnuts
- 28 g unsalted butter
- 150 g onion, quartered
- 6 g garlic cloves (approx. 2 cloves)
- 100 g carrot, diced
- 70 g celery stalk, diced
- 960 ml vegetable or chicken broth
- 1 sprig fresh thyme
- 1/2 tsp salt (or to taste)
- 1/4 tsp black pepper (or to taste)
- 120 ml heavy cream
- 30 ml Cognac (optional)
Instructions
- Add 28 g unsalted butter, 150 g onion (quartered), and 6 g garlic cloves to the mixing bowl. Chop 3 sec / Speed 5. Scrape down the sides of the mixing bowl with the spatula.
- Sauté the aromatics for 5 min / 120°C / Speed 1.
- Add 100 g diced carrot and 70 g diced celery to the mixing bowl. Sauté for another 5 min / 120°C / Speed 1.
- Add 300 g roasted chestnuts, 960 ml vegetable or chicken broth, 1 sprig fresh thyme, 1/2 tsp salt, and 1/4 tsp black pepper to the mixing bowl. Place the simmering basket on the lid instead of the measuring cup to prevent splatter and allow for some evaporation.
- Cook for 20 min / 100°C / Speed 1. After 10 minutes, pause, scrape down the sides and bottom of the mixing bowl with the spatula. Continue cooking for the remaining 10 minutes.
- Carefully remove the thyme sprig (if still intact) from the mixing bowl. Puree the soup for 1 min / Speed 5-9, gradually increasing the speed until smooth.
- Add 120 ml heavy cream and 30 ml Cognac (if using) to the mixing bowl. Mix for 10 sec / Speed 3. Taste and adjust seasoning with additional salt and pepper if needed.
- Reheat the soup gently for 2 min / 90°C / Speed 1 (Reverse) to ensure even distribution and prevent sticking.
- Serve hot, garnished with additional fresh thyme if desired.
