Vegetarian Pad Thai Noodles

  1. Place the dried rice noodles in a large bowl and cover with hot tap water. Let them soak while you prepare the rest of the ingredients, about 15-20 minutes, until pliable but still firm. Drain well and set aside.
  2. If desired, pan-fry or air-fry the pressed and cubed tofu until golden brown and slightly crispy. Set aside.
  3. Add roasted peanuts to the Thermomix bowl. Chop 3 sec / Speed 6. Transfer to a small bowl and set aside.
  4. Add shallots and garlic to the Thermomix bowl. Chop 5 sec / Speed 5. Scrape down the sides of the bowl.
  5. Add 30 g vegetable oil. Sauté 5 min / 120°C / Speed 1. Remove measuring cup and place simmering basket on lid to prevent splatter and allow for slight evaporation.
  6. Add tamarind paste, soy sauce, brown sugar, lime juice, and sriracha (if using) to the bowl. Cook 3 min / 95°C / Speed 2. This will combine the sauce ingredients and dissolve the sugar.
  7. Add the drained rice noodles, prepared tofu, garlic chives, spring onions, bean sprouts, and julienned carrot to the bowl. Mix 2 min / 90°C / Reverse / Speed 1.5, using the spatula through the lid opening to help combine if needed.
  8. Taste and adjust seasoning if necessary. Mix for a final 30 sec / 90°C / Reverse / Speed 1 to ensure everything is well coated and warmed through.
  9. Serve immediately, garnished with chopped peanuts and fresh lime wedges.
