Vegetarian Pad Thai

Ingredients
- 200 g flat rice noodles
- 300 g firm tofu, pressed and cubed (approx. 2 cm)
- 30 g peanut oil (or other neutral oil), plus extra for pan-frying tofu
- 2 shallots, peeled
- 3 cloves garlic, peeled
- 100 g carrots, julienned (optional)
- 100 g bean sprouts, plus extra for serving
- 50 g fresh chives, chopped into 2-3 cm pieces, plus extra for serving
- 50 g roasted peanuts, unsalted, roughly chopped, plus extra for serving
- 1 lime, cut into wedges, for serving
- 60 g tamarind paste
- 60 g light soy sauce (or tamari for gluten-free)
- 80 g brown sugar (or palm sugar)
- 50 g water
- 1 tsp Sriracha or chilli flakes (optional, for heat)
Instructions
- Place rice noodles in a large bowl and cover with hot water. Let them soak for 15-20 minutes, or according to package instructions, until pliable but still firm. Drain and set aside.
- While noodles soak, press excess water from the tofu. Cut into 2 cm cubes. Heat a frying pan with a little oil over medium-high heat and pan-fry tofu cubes until golden brown and crispy on all sides. Set aside.
- Add shallots and garlic to the mixing bowl. Chop 3 sec / Speed 5. Scrape down sides of bowl.
- Add 30 g peanut oil to the mixing bowl. Sauté 3 min / 120°C / Speed 1. Scrape down sides of bowl.
- Add tamarind paste, soy sauce, brown sugar, water, and Sriracha (if using) to the mixing bowl. Cook 5 min / 95°C / Speed 2. Remove measuring cup and place simmering basket on lid to prevent splatter and allow slight evaporation.
- Add julienned carrots (if using) to the mixing bowl. Cook 3 min / 90°C / Speed 1 / Reverse. Pause and scrape down sides of bowl.
- Add the soaked and drained rice noodles and the pan-fried tofu to the mixing bowl. Cook 4 min / 90°C / Speed 1 / Reverse, ensuring the noodles are gently separated and coated with the sauce. Pause and scrape down sides and bottom of bowl to prevent sticking.
- Add bean sprouts and chopped chives to the mixing bowl. Cook 2 min / 90°C / Speed 1 / Reverse. Ensure mixture is well combined.
- Add chopped peanuts to the mixing bowl. Mix 30 sec / Speed 1 / Reverse to incorporate. Finish with a final 1 min / 90°C / Speed 1 / Reverse to settle and prevent sticking.
- Serve immediately, garnished with extra fresh bean sprouts, chives, chopped peanuts, and lime wedges.
