Vegetarian Pad Thai

  1. Place the flat rice noodles in a large bowl, cover with hot water, and let them soak for 15-20 minutes, or according to package instructions, until pliable but still firm. Drain well and set aside.
  2. Place roasted peanuts into the clean, dry Thermomix bowl. Chop 3 sec / Speed 7. Transfer to a small bowl and set aside for garnish.
  3. Add shallots and garlic to the Thermomix bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl.
  4. Add vegetable oil to the bowl. Sauté 3 min / 120°C / Speed 1. Scrape down the sides.
  5. Add the pressed and cubed tofu to the bowl. Sauté 8 min / 120°C / Speed 1 / Reverse. This will heat the tofu and allow it to absorb some flavour, though it will not become crispy.
  6. Add tamarind paste, brown sugar, soy sauce, rice vinegar, sriracha (if using), and 50 g of water to the bowl. Cook 3 min / 98°C / Speed 2 / Reverse. This will create the Pad Thai sauce.
  7. Add the soaked and drained rice noodles and the remaining 50 g of water to the bowl. Cook 8 min / 95°C / Speed 2 / Reverse, ensuring the noodles are moving freely. If the mixture seems too dry, add an extra splash of water (up to 50g).
  8. Pause, scrape down the sides and bottom of the bowl with the spatula to ensure even cooking and prevent sticking. Check the noodle consistency.
  9. Add the bean sprouts and chopped garlic chives (or spring onion greens) to the bowl. Cook 2 min / 90°C / Speed 1 / Reverse.
  10. To settle and prevent sticking, cook for a final 1 min / 90°C / Speed 1 / Reverse.
  11. Transfer the Vegetarian Pad Thai to a serving platter. Garnish with the chopped roasted peanuts and serve immediately with fresh lime wedges.
