Vegetarian Pad Thai

  1. Place dried rice noodles in a large bowl and cover with hot water. Let them soak for 15-20 minutes, or until pliable but still firm. Drain well and set aside.
  2. Press the firm tofu to remove excess water, then cut into 1.5 cm cubes. For crispy tofu, pan-fry or air-fry until golden brown and set aside. Alternatively, you can sauté it in the Thermomix later.
  3. Add garlic and shallots to the clean Thermomix bowl. Chop 3 sec / Speed 7. Scrape down the sides of the bowl.
  4. Add 2 tbsp vegetable oil to the bowl. Sauté 3 min / 120°C / Speed 1. Place simmering basket on lid instead of measuring cup to prevent splatter.
  5. Add tamarind paste, palm sugar, soy sauce, rice vinegar, and water to the bowl. Cook 5 min / 95°C / Speed 2 (Reverse). Place simmering basket on lid.
  6. Add sliced red bell pepper and carrot to the bowl. Cook 5 min / 100°C / Speed 2 (Reverse). Place simmering basket on lid.
  7. Pause, scrape down the sides and bottom of the bowl with the spatula to ensure even cooking and prevent sticking. Check thickness and adjust liquid if needed (add 1-2 tbsp water if too thick).
  8. Add the drained rice noodles, bean sprouts, and pre-cooked tofu (if using the external method) to the bowl. Cook 3 min / 90°C / Speed 2 (Reverse). Place simmering basket on lid.
  9. Add spring onions and half of the chopped peanuts to the bowl. Gently mix 1 min / 90°C / Speed 1 (Reverse) to combine and warm through.
  10. Serve immediately, garnished with fresh coriander, the remaining chopped peanuts, and lime wedges.
