Vegetarian Pad Thai

Ingredients
- 200 g dried flat rice noodles
- 200 g firm tofu, pressed and cubed
- 2 tbsp vegetable oil (plus extra for tofu if pan-frying)
- 3 cloves garlic, peeled
- 2 shallots, peeled
- 1 red bell pepper, deseeded and sliced
- 1 carrot, peeled and julienned or thinly sliced
- 100 g bean sprouts
- 3 spring onions, sliced into 2-inch pieces
- 50 g roasted peanuts, roughly chopped
- Fresh coriander, for garnish
- Lime wedges, for serving
- For the Pad Thai Sauce:
- 60 g tamarind paste
- 50 g palm sugar (or brown sugar)
- 40 g soy sauce (or tamari for gluten-free)
- 1 tbsp rice vinegar
- 30 g water
Instructions
- Place dried rice noodles in a large bowl and cover with hot water. Let them soak for 15-20 minutes, or until pliable but still firm. Drain well and set aside.
- Press the firm tofu to remove excess water, then cut into 1.5 cm cubes. For crispy tofu, pan-fry or air-fry until golden brown and set aside. Alternatively, you can sauté it in the Thermomix later.
- Add garlic and shallots to the clean Thermomix bowl. Chop 3 sec / Speed 7. Scrape down the sides of the bowl.
- Add 2 tbsp vegetable oil to the bowl. Sauté 3 min / 120°C / Speed 1. Place simmering basket on lid instead of measuring cup to prevent splatter.
- Add tamarind paste, palm sugar, soy sauce, rice vinegar, and water to the bowl. Cook 5 min / 95°C / Speed 2 (Reverse). Place simmering basket on lid.
- Add sliced red bell pepper and carrot to the bowl. Cook 5 min / 100°C / Speed 2 (Reverse). Place simmering basket on lid.
- Pause, scrape down the sides and bottom of the bowl with the spatula to ensure even cooking and prevent sticking. Check thickness and adjust liquid if needed (add 1-2 tbsp water if too thick).
- Add the drained rice noodles, bean sprouts, and pre-cooked tofu (if using the external method) to the bowl. Cook 3 min / 90°C / Speed 2 (Reverse). Place simmering basket on lid.
- Add spring onions and half of the chopped peanuts to the bowl. Gently mix 1 min / 90°C / Speed 1 (Reverse) to combine and warm through.
- Serve immediately, garnished with fresh coriander, the remaining chopped peanuts, and lime wedges.
