Vegetarian Pad Thai

  1. Soak the dried flat rice noodles in hot water for 15-20 minutes, or until pliable but still firm. Drain well and set aside.
  2. Press the firm tofu to remove excess water, then cut into 2 cm cubes. For best texture, pan-fry or air fry the tofu until golden and slightly crispy. Set aside.
  3. Add the roasted peanuts to a clean, dry Thermomix bowl. Chop 3 sec / Speed 6. Transfer to a small bowl and set aside for garnish.
  4. Add the shallots and garlic to the clean Thermomix bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl with the spatula.
  5. Add the vegetable oil to the bowl. Sauté 5 min / 120°C / Speed 1.
  6. Add the tamarind paste, brown sugar, soy sauce (or tamari), lime juice, chili flakes, and water to the bowl. Cook 5 min / 98°C / Speed 2 (Reverse), placing the simmering basket on the lid instead of the measuring cup to allow for evaporation.
  7. Add the pre-fried tofu and the soaked, drained rice noodles to the bowl. Cook 5-7 min / 90°C / Speed 2 (Reverse). Pause halfway through to scrape down the sides and gently separate the noodles with the spatula to ensure even cooking and prevent sticking.
  8. Add the bean sprouts, chopped spring onions, and chopped fresh chives to the bowl. Cook 1 min / 90°C / Speed 1 (Reverse).
  9. Perform a final gentle stir for 1 min / 90°C / Speed 1 (Reverse) to ensure all ingredients are well combined and settled.
  10. Transfer the Vegetarian Pad Thai to serving plates. Garnish generously with the crushed peanuts and serve immediately with fresh lime wedges.
