Vegetarian Pad Thai

  1. Press the tofu firmly to remove excess water, then cut into 1.5 cm cubes. Set aside.
  2. Cook the rice noodles according to package directions until al dente. Drain, rinse with cold water to prevent sticking, and set aside.
  3. Add garlic and shallots to the clean and dry Thermomix bowl. Chop 3 sec / Speed 5. Scrape down sides of bowl.
  4. Add 15 g vegetable oil to the bowl. Sauté 3 min / 120°C / Speed 1. Transfer to a separate bowl and set aside.
  5. Add the remaining 15 g vegetable oil to the bowl. Add the pressed tofu cubes. Sauté 8 min / 120°C / Speed 1 (Reverse). This will lightly brown the tofu. Transfer to the bowl with the sautéed aromatics.
  6. Without cleaning the bowl, add tamarind paste, brown sugar, soy sauce, rice vinegar, and sriracha (if using). Cook 5 min / 95°C / Speed 2. Place the simmering basket on the lid instead of the measuring cup to allow for evaporation.
  7. Pause and scrape down the sides and bottom of the bowl to ensure the sauce is well combined. Check consistency and add a splash of water if too thick.
  8. Add the cooked noodles, sautéed tofu and aromatics, 100 g bean sprouts, chives, and sliced spring onions to the bowl. Mix gently 1 min / 90°C / Speed 1 (Reverse) to combine and warm through, ensuring everything is coated in the sauce.
  9. Serve immediately, garnished with chopped roasted peanuts, fresh coriander, extra bean sprouts, and lime wedges.
