Vegetarian Pad Thai

Ingredients
- 200 g dried flat rice noodles
- 200 g firm or extra-firm tofu, pressed and cubed (approx. 2 cm)
- 50 g roasted peanuts, unsalted
- 2 shallots, peeled
- 3 cloves garlic, peeled
- 30 g vegetable oil
- 100 g tamarind paste
- 80 g brown sugar
- 60 g soy sauce (or tamari for gluten-free)
- 30 g rice vinegar
- 1 tsp sriracha or chilli flakes (optional, adjust to taste)
- 150 g bean sprouts
- 50 g fresh chives, cut into 3 cm pieces
- 2 spring onions, green parts sliced
- 1 lime, cut into wedges, for serving
Instructions
- Place peanuts into the clean, dry mixing bowl. Chop 3 sec / Speed 6. Transfer to a small bowl and set aside.
- Soak the dried rice noodles in hot water (not boiling) for 15-20 minutes, or until pliable but still firm. Drain well and set aside.
- Place cubed tofu into the Varoma dish. Set aside.
- Add shallots and garlic to the mixing bowl. Chop 3 sec / Speed 5. Scrape down sides of bowl.
- Add 30 g vegetable oil to the bowl. Sauté 5 min / 120°C / Speed 1. Meanwhile, place the Varoma dish with tofu into position.
- Add tamarind paste, brown sugar, soy sauce, rice vinegar, and sriracha (if using) to the mixing bowl. Cook 5 min / Varoma / Speed 1. The steam from the sauce will cook the tofu in the Varoma.
- Remove Varoma. Check tofu for doneness; it should be heated through. Set aside.
- Add the drained, soaked rice noodles to the mixing bowl with the sauce. Cook 5 min / 95°C / Reverse / Speed 1.5. Use the simmering basket on the lid instead of the measuring cup to allow some evaporation.
- Pause and scrape down the sides and bottom of the bowl with the spatula. Gently separate any noodles that may have stuck together.
- Add the steamed tofu, bean sprouts, chives, and sliced spring onions to the bowl. Cook 2 min / 90°C / Reverse / Speed 1, ensuring everything is well combined and heated through.
- Transfer the Pad Thai to a large serving platter. Garnish with the chopped peanuts and lime wedges.
- Serve immediately with extra lime wedges on the side.
