Vegetarian Pad Thai

  1. Place peanuts into the clean, dry mixing bowl. Chop 3 sec / Speed 6. Transfer to a small bowl and set aside.
  2. Soak the dried rice noodles in hot water (not boiling) for 15-20 minutes, or until pliable but still firm. Drain well and set aside.
  3. Place cubed tofu into the Varoma dish. Set aside.
  4. Add shallots and garlic to the mixing bowl. Chop 3 sec / Speed 5. Scrape down sides of bowl.
  5. Add 30 g vegetable oil to the bowl. Sauté 5 min / 120°C / Speed 1. Meanwhile, place the Varoma dish with tofu into position.
  6. Add tamarind paste, brown sugar, soy sauce, rice vinegar, and sriracha (if using) to the mixing bowl. Cook 5 min / Varoma / Speed 1. The steam from the sauce will cook the tofu in the Varoma.
  7. Remove Varoma. Check tofu for doneness; it should be heated through. Set aside.
  8. Add the drained, soaked rice noodles to the mixing bowl with the sauce. Cook 5 min / 95°C / Reverse / Speed 1.5. Use the simmering basket on the lid instead of the measuring cup to allow some evaporation.
  9. Pause and scrape down the sides and bottom of the bowl with the spatula. Gently separate any noodles that may have stuck together.
  10. Add the steamed tofu, bean sprouts, chives, and sliced spring onions to the bowl. Cook 2 min / 90°C / Reverse / Speed 1, ensuring everything is well combined and heated through.
  11. Transfer the Pad Thai to a large serving platter. Garnish with the chopped peanuts and lime wedges.
  12. Serve immediately with extra lime wedges on the side.
