Vegetarian Fried Rice

Ingredients
- 30 g vegetable oil or sesame oil
- 1 onion, quartered
- 2 cloves garlic
- 10 g fresh ginger, peeled
- 150 g mixed vegetables (e.g., carrots, peas, corn, bell pepper), cut into small dice
- 2 eggs, lightly beaten (optional)
- 400 g cold, day-old cooked rice (basmati or jasmine recommended)
- 50 g soy sauce
- 1 tsp sugar (optional)
- Pinch of white pepper
- 1 tsp toasted sesame oil, for finishing
- 1 spring onion, sliced, for garnish
Instructions
- Add onion, garlic, and ginger to the mixing bowl. Chop 3 sec / Speed 5. Scrape down sides of bowl.
- Add 30 g vegetable oil to the mixing bowl. Sauté 5 min / 120°C / Speed 1.
- Add 150 g mixed vegetables (e.g., carrots, peas, corn, bell pepper), cut into small dice, to the bowl. Sauté 5 min / 120°C / Speed 1 (Reverse).
- If using eggs, add 2 lightly beaten eggs to the bowl. Cook 2 min / 90°C / Speed 2 (Reverse) to scramble lightly with the vegetables.
- Add 400 g cold cooked rice, 50 g soy sauce, 1 tsp sugar (if using), and a pinch of white pepper to the bowl.
- Cook 8 min / 95°C / Speed 2 (Reverse).
- Pause, scrape down the sides and bottom of the mixing bowl with the spatula to ensure even cooking and prevent sticking. Check texture.
- Continue cooking for another 2 min / 90°C / Speed 1 (Reverse) to settle and prevent sticking.
- Transfer the fried rice to a serving dish. Drizzle with 1 tsp toasted sesame oil and garnish with sliced spring onion before serving.
