- 100 g fenugreek seeds
- 500 ml vodka (80 proof or higher)
- 250 g granulated sugar
- 250 g brown sugar
- 250 g water
- 2 tsp homemade maple extract

- Lightly crush 100 g fenugreek seeds using a mortar and pestle or by pulsing briefly in a spice grinder. Do not grind to a powder.
- Place the crushed fenugreek seeds in a clean, airtight glass jar.
- Pour 500 ml vodka over the fenugreek seeds, ensuring they are fully submerged.
- Seal the jar tightly and store it in a cool, dark place for 2-4 weeks, shaking gently every few days. The longer it infuses, the stronger the flavor.
- After infusion, strain the liquid through a fine-mesh sieve or cheesecloth into a clean bottle, discarding the solids. This is your homemade maple extract. Store it in a cool, dark place.
- **Part 2: Traditional Maple Syrup (Thermomix Preparation)**
- Add 250 g granulated sugar, 250 g brown sugar, and 250 g water to the Thermomix bowl.
- Cook 10 min / 100°C / Speed 2 to dissolve the sugars. Remove the measuring cup and place the simmering basket on the lid to allow for evaporation.
- Pause, scrape down the sides and bottom of the Thermomix bowl with the spatula to ensure all sugar is dissolved and prevent sticking.
- Continue to cook 5 min / 95°C / Speed 2 (Reverse) to allow the syrup to thicken slightly. Keep the simmering basket on the lid.
- Add 2 tsp of your homemade maple extract to the syrup in the Thermomix bowl.
- Mix 1 min / 90°C / Speed 1 (Reverse) to combine the extract evenly and settle the syrup.
