Traditional Maple Syrup

Ingredients
- 500 g light brown sugar
- 500 ml water
- 2 tsp maple extract
- Pinch of salt
Instructions
- Add 500 g light brown sugar and 500 ml water to the mixing bowl.
- Heat 5 min / 90°C / Speed 2 to dissolve the sugar.
- Add 2 tsp maple extract and a pinch of salt to the bowl.
- Cook 8 min / 95°C / Speed 2 (Reverse), placing the simmering basket on the lid instead of the measuring cup to allow for evaporation and thickening.
- Pause, scrape down the sides and bottom of the mixing bowl with the spatula to ensure even cooking and prevent sticking. Check the consistency; if you prefer a thicker syrup, continue cooking for another 2-3 minutes at the same settings.
- Cook for a final 2 min / 90°C / Speed 1 (Reverse) to settle the syrup and prevent any sticking to the bottom of the bowl.
- Carefully transfer the hot syrup to a clean, heatproof bottle or jar. Allow to cool completely before sealing and storing.
