Traditional Maple Syrup

  1. Add 500 g light brown sugar and 500 ml water to the mixing bowl.
  2. Heat 5 min / 90°C / Speed 2 to dissolve the sugar.
  3. Add 2 tsp maple extract and a pinch of salt to the bowl.
  4. Cook 8 min / 95°C / Speed 2 (Reverse), placing the simmering basket on the lid instead of the measuring cup to allow for evaporation and thickening.
  5. Pause, scrape down the sides and bottom of the mixing bowl with the spatula to ensure even cooking and prevent sticking. Check the consistency; if you prefer a thicker syrup, continue cooking for another 2-3 minutes at the same settings.
  6. Cook for a final 2 min / 90°C / Speed 1 (Reverse) to settle the syrup and prevent any sticking to the bottom of the bowl.
  7. Carefully transfer the hot syrup to a clean, heatproof bottle or jar. Allow to cool completely before sealing and storing.
