Traditional High-Energy Pemmican Bars

Ingredients
- 250 g dried beef jerky (unsweetened, unmarinated)
- 300 g rendered beef tallow
- 50 g dried cranberries (optional)
- 20 g honey (optional, approx. 1 tbsp)
Instructions
- Ensure the Thermomix bowl is completely dry and clean before starting.
- Add the dried beef jerky to the Thermomix bowl. Grind for 30 seconds / Speed 10. Scrape down the sides of the bowl with the spatula. Repeat if necessary until a fine, powdery texture is achieved.
- Transfer the ground meat powder to a separate bowl and set aside.
- Add the rendered beef tallow to the clean, dry Thermomix bowl. Melt for 5-7 minutes / 80°C / Speed 1, or until completely liquid.
- Add the ground meat powder back into the bowl with the melted tallow. If using, add the dried cranberries and honey now.
- Mix for 30 seconds / Speed 3 / Reverse to combine all ingredients thoroughly.
- Pause and scrape down the sides and bottom of the bowl with the spatula to ensure all ingredients are well incorporated.
- Mix for another 15 seconds / Speed 3 / Reverse if needed to achieve an even consistency.
- Pour the mixture into a parchment-lined square or rectangular container (approximately 15x15 cm) or individual silicone molds. Press down very firmly with a spatula to compact the pemmican.
- Refrigerate for at least 2 hours, or until the pemmican is completely firm.
- Once firm, remove the pemmican from the container and cut into desired bars or squares for serving.
