Thai Chicken Noodle Stir-Fry

Ingredients
- 300 g chicken breast, cut into thin strips
- 200 g dried flat rice noodles (or 300 g fresh egg noodles)
- 2 cloves garlic
- 1 small red chili (optional), deseeded
- 20 g cooking oil
- 100 g carrot, julienned
- 150 g red bell pepper, thinly sliced
- 2 spring onions, sliced into 3 cm pieces
- 100 g bean sprouts
- 1 lime, cut into wedges (for serving)
- Fresh coriander, chopped (for garnish)
- 40 g soy sauce
- 30 g fish sauce
- 20 g oyster sauce
- 15 g brown sugar
- 50 g water
Instructions
- If using dried rice noodles, place them in a large bowl and cover with hot water. Let them soak for 10-15 minutes until pliable, then drain well and set aside. If using fresh egg noodles, cook them according to package directions in a separate pot, drain, and set aside.
- Add garlic and red chili (if using) to the Thermomix bowl. Chop 3 sec / Speed 7. Scrape down the sides of the bowl.
- Add 10 g of cooking oil and the chicken strips to the bowl. Sauté 6 min / 120°C / Speed 1 (Reverse). Transfer the cooked chicken to a separate bowl and set aside.
- Add the remaining 10 g of cooking oil, julienned carrot, and thinly sliced red bell pepper to the Thermomix bowl. Sauté 5 min / 120°C / Speed 1 (Reverse).
- In a separate small bowl, combine the soy sauce, fish sauce, oyster sauce, brown sugar, and water. Stir well until the sugar has dissolved.
- Add the sautéed chicken, drained noodles, sliced spring onions, bean sprouts, and the prepared sauce to the Thermomix bowl with the vegetables. Cook 4 min / 95°C / Speed 2 (Reverse).
- Pause, scrape down the sides and bottom of the bowl to ensure even mixing. Continue cooking if needed, or proceed to the next step.
- Squeeze the juice from half of the lime into the noodle mixture. Stir 1 min / 90°C / Speed 1 (Reverse) to combine and heat through evenly.
- Serve immediately, garnished with fresh coriander and extra lime wedges on the side.
