Sweet Potato and Lentil Stew

Ingredients
- 300 g sweet potatoes, peeled and diced (approx. 1.5-2 cm cubes)
- 1 red onion, halved
- 2 garlic cloves
- 1 fresh red chilli, deseeded (or to taste)
- 20 g olive oil
- 100 g green lentils, rinsed
- ½ tsp ground cumin
- 600 g vegetable stock
- 400 g canned chopped tomatoes
- 40 g plain vegan yogurt alternative (e.g., soy-based)
- 4 sprigs fresh dill, leaves picked and chopped
- 2 tbsp mixed seeds (e.g., pumpkin, sunflower)
Instructions
- Peel and dice the sweet potatoes into 1.5-2 cm cubes. Set aside.
- Add the red onion, garlic cloves, and deseeded fresh red chilli to the mixing bowl. Chop 5 sec / Speed 5. Scrape down the sides of the bowl with the spatula.
- Add 20 g olive oil to the bowl. Sauté 3 min / 120°C / Speed 1 (Reverse).
- Add 100 g rinsed green lentils and ½ tsp ground cumin to the bowl. Sauté 2 min / 100°C / Speed 1 (Reverse).
- Add the diced sweet potatoes, 600 g vegetable stock, and 400 g canned chopped tomatoes to the bowl. Place the simmering basket on the lid instead of the measuring cup to allow steam to escape and prevent splattering.
- Cook 15 min / 95°C / Speed 2 (Reverse). Pause after 8-10 minutes, scrape down the sides and bottom of the bowl with the spatula, and check the consistency. Adjust liquid if needed.
- To finish, cook for a final 1 min / 90°C / Speed 1 (Reverse) to settle the stew and prevent sticking.
- Serve the sweet potato and lentil stew immediately, topped with 40 g plain vegan yogurt alternative, chopped fresh dill, and 2 tbsp mixed seeds.
