Sweet Apple Marmalade

Ingredients
- 1 kg apples (e.g., Granny Smith, Fuji, or a mix), peeled, cored, and quartered
- 50 g fresh lemon juice
- 600 g granulated sugar

- Ensure your Thermomix bowl is clean and dry. Prepare your jars by sterilizing them in boiling water or a hot oven (120°C for 15 minutes) and keep them warm.
- Add the peeled, cored, and quartered apples to the mixing bowl. Chop 5 sec / Speed 5.
- Add the lemon juice to the bowl. Cook 15 min / 100°C / Speed 2 (Reverse), or until the apples are very soft. If the mixture seems too dry, add 50g water.
- Pause and scrape down the sides and bottom of the mixing bowl with the spatula to ensure all apple pieces are incorporated. Check the thickness and adjust liquid if needed.
- Add the granulated sugar to the bowl. Cook 25 min / 95°C / Speed 2 (Reverse), placing the simmering basket on the lid instead of the measuring cup to allow steam to escape and prevent splattering. The mixture should be visibly bubbling but not splashing out.
- After 20 minutes of cooking with sugar, pause and scrape down the sides and bottom of the mixing bowl. Continue cooking for the remaining time. The mixture should sound like a steady churn, not laboured.
- To check for set, place a small amount of marmalade on a chilled plate. After 1 minute, push it with your finger; if it wrinkles, it's ready. If not, cook for another 5-10 minutes at 95°C / Speed 2 (Reverse), checking again.
- Once the marmalade reaches the desired consistency, cook for a final 1 min / 90°C / Speed 1 (Reverse) to settle and prevent sticking. Carefully pour the hot marmalade into the warm, sterilized jars, filling them to the brim. Seal immediately.
