Sweet and Sticky Asian Tofu Marinade

Ingredients
- 2 garlic cloves
- 15 g fresh ginger, peeled
- 60 g tamari (gluten-free soy sauce)
- 40 g maple syrup
- 30 g rice vinegar
- 15 g sesame oil
- 60 g water
- 10 g cornflour (cornstarch)
- Optional: 1/2 tsp chili flakes
Instructions
- Add 2 garlic cloves and 15 g fresh ginger to the mixing bowl. Chop 3 sec / Speed 7. Scrape down the sides of the bowl.
- Add 60 g tamari, 40 g maple syrup, 30 g rice vinegar, 15 g sesame oil, 60 g water, and optional 1/2 tsp chili flakes to the mixing bowl. Cook 5 min / 100°C / Speed 1. Place the simmering basket on the lid instead of the measuring cup to allow for evaporation.
- In a small separate bowl, mix 10 g cornflour with 20 g cold water until smooth to create a slurry. Add the cornflour slurry to the mixing bowl through the lid opening.
- Cook for an additional 2 min / 95°C / Speed 2. The sauce should thicken slightly.
- To ensure even distribution and prevent sticking, finish by cooking 1 min / 90°C / Speed 1 (Reverse).
