Summer Berry and Apple Pear Compote

Ingredients
- 300 g apples, peeled, cored, and quartered
- 300 g pears, peeled, cored, and quartered
- 200 g fresh strawberries, hulled and halved
- 50 g water
- 30-50 g maple syrup or sugar (adjust to taste)
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon vanilla extract
- 1 tablespoon lemon juice
Instructions
- Peel, core, and quarter the apples (300 g) and pears (300 g). Place them into the mixing bowl. Chop 3 sec / Speed 5.
- Add water (50 g), maple syrup (30-50 g), ground cinnamon (1/2 tsp), and lemon juice (1 tbsp) to the mixing bowl.
- Cook 15 min / 95°C / Speed 2 / Reverse. Remove the measuring cup and place the simmering basket on the lid to prevent splatter and allow for some evaporation.
- Pause, scrape down the sides and bottom of the mixing bowl with the spatula. Check the consistency of the fruit. If desired, cook for an additional 5-10 minutes / 95°C / Speed 2 / Reverse, or until desired tenderness is reached.
- Add the hulled and halved strawberries (200 g) and vanilla extract (1/2 tsp) to the bowl. Gently stir 1 min / 90°C / Speed 1 / Reverse.
- Transfer the compote to a serving dish. Serve warm or chilled.
