Ingredients
- 2 large eggs (size M), separated
- 125 g unsalted butter, softened
- 250 g plain flour (Type 405)
- 1 tsp baking powder
- 250 ml milk
- 150 g unsweetened apple sauce (Apfelmark)
- A little fat for greasing the waffle iron
Instructions
- Insert the butterfly whisk into the clean, dry mixing bowl. Add the egg whites and whip for 3 minutes / Speed 3.5, or until stiff peaks form. Carefully transfer the whipped egg whites to a separate bowl and set aside. Remove the butterfly whisk.
- Add the softened butter and egg yolks to the mixing bowl. Mix for 30 seconds / Speed 4, scraping down the sides if necessary, until creamy.
- Add the flour, baking powder, and milk to the mixing bowl. Mix for 30 seconds / Speed 4, scraping down the sides to ensure all ingredients are well combined.
- Add the unsweetened apple sauce to the mixing bowl. Mix for 15 seconds / Speed 3 until fully incorporated.
- Carefully add the reserved whipped egg whites to the batter in the mixing bowl. Gently fold them in using a spatula or by mixing for 5 seconds / Speed 1 / Reverse, ensuring the air is not knocked out of the egg whites. Do not overmix.
- Preheat your waffle iron and grease it lightly with a little fat.
- Pour approximately one ladleful of batter per waffle into the hot waffle iron and cook until golden brown and crispy (typically 3-5 minutes per waffle, depending on your iron).
- Transfer the cooked waffles to a wire rack to cool slightly and prevent them from becoming soggy. Repeat with the remaining batter.
- Serve the sugar-free apple waffles immediately with your favorite toppings, such as fresh fruit or a sprinkle of cinnamon. Store any leftover waffles in an airtight container for up to 3 days.
