Strawberry Chia Pudding

Ingredients
- 40 g chia seeds
- 200 ml coconut milk (or almond milk)
- 1 tsp vanilla extract
- 150 g fresh strawberries, hulled
- 20 g agave syrup
- 15 ml water
- Fresh fruit for garnish (e.g., sliced strawberries, mango)
- Fresh mint leaves for garnish
Instructions
- Add 200 ml coconut milk, 40 g chia seeds, and 1 tsp vanilla extract to the Thermomix bowl. Mix 10 sec / Speed 3.
- Divide the chia mixture evenly into 4 small glasses or jars. Cover and refrigerate for at least 4 hours, or preferably overnight, until set.
- Once the chia pudding is set, clean and dry the Thermomix bowl.
- Add 150 g hulled strawberries, 20 g agave syrup, and 15 ml water to the clean bowl. Blend 20 sec / Speed 8, or until smooth. Scrape down the sides if needed and blend again for a few seconds.
- Pour the strawberry topping over the chilled chia puddings.
- Garnish each serving with fresh fruit pieces and a few mint leaves before serving.
