Steamed Salmon with Fluffy Rice and Cucumber Dill Salad

  1. Rinse the basmati rice thoroughly under cold running water until the water runs clear. Place the rinsed rice into the simmering basket and set aside.
  2. Pat salmon fillets dry. Drizzle with 1 tbsp olive oil, season with ½ tsp salt and ¼ tsp black pepper. If using, place lemon slices on top of each fillet. Place the seasoned salmon fillets in the Varoma dish, ensuring some vents are clear for steam circulation.
  3. Wash the cucumber. Using a vegetable peeler, you may peel alternating strips from the cucumber for presentation. Halve lengthwise and scoop out seeds if large. Slice thinly or dice into small pieces. Place in a medium bowl.
  4. Add ¼ red onion (if using) to the clean Thermomix bowl. Chop 3 sec / Speed 5. Scrape down sides. Add chopped dill to the bowl.
  5. Add 2 tbsp white wine vinegar, 1 tbsp olive oil, ½ tsp sugar, ¼ tsp salt, and a pinch of black pepper to the Thermomix bowl (with onion and dill). Mix 5 sec / Speed 3.
  6. Pour the dressing over the chopped cucumber in the medium bowl. Stir gently to combine. Set aside to marinate while the salmon and rice cook.
  7. Add 1000 g water and 1 tsp salt to the Thermomix bowl. Insert the simmering basket with the rinsed rice. Secure the Varoma dish with the salmon on top. Cook 25 min / Varoma / Speed 4.
  8. Carefully remove the Varoma and simmering basket. Fluff the rice with a fork. Serve the steamed salmon and fluffy rice with the fresh cucumber dill salad on the side.
