Steamed Pork Dumplings

Ingredients
- 300 g plain flour, plus extra for dusting
- 150 ml warm water
- 1/2 tsp salt
- 400 g ground pork
- 150 g napa cabbage, finely shredded
- 3 spring onions, finely chopped
- 20 g fresh ginger, peeled and roughly chopped
- 2 cloves garlic, peeled
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp cornflour
- 1/2 tsp white pepper
- For the Dipping Sauce:
- 3 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tsp sesame oil
- 1/2 tsp chili flakes (optional)
Instructions
- To make the dough, add 300 g plain flour and 1/2 tsp salt to the Thermomix bowl. Mix 5 sec / Speed 5.
- Add 150 ml warm water. Knead 2 min / Dough mode. Transfer the dough to a lightly floured surface, form into a ball, cover with a clean cloth, and let rest for at least 30 minutes.
- For the filling, add 20 g fresh ginger and 2 cloves garlic to the clean Thermomix bowl. Chop 3 sec / Speed 7. Scrape down the sides of the bowl.
- Add 150 g finely shredded napa cabbage and 3 finely chopped spring onions to the bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl.
- Add 400 g ground pork, 2 tbsp soy sauce, 1 tbsp sesame oil, 1 tbsp cornflour, and 1/2 tsp white pepper to the bowl. Mix 20 sec / Reverse / Speed 3 until well combined. Transfer the filling to a separate bowl and set aside.
- Divide the rested dough into 4 equal portions. Roll each portion into a long log (approx. 2 cm diameter). Cut each log into 12-15 equal pieces.
- On a lightly floured surface, flatten each piece of dough and roll it into a thin circle (approx. 7-8 cm diameter), keeping the edges slightly thinner than the center.
- Place about 1 tablespoon of filling in the center of each dough circle. Fold the dough over the filling to create a half-moon shape. Pinch and pleat the edges to seal the dumpling securely.
- Line the Varoma tray and Varoma dish with baking paper, ensuring some holes are left uncovered for steam circulation. Arrange the dumplings in a single layer, making sure they do not touch each other.
- Clean the Thermomix bowl. Add 1000 g water to the bowl. Place the Varoma into position with the lid on.
- Steam the dumplings for 20-25 min / Varoma / Speed 2. If steaming in batches, ensure there is enough water in the bowl for subsequent batches, adding more if necessary.
- While the dumplings are steaming, prepare the dipping sauce. Combine 3 tbsp soy sauce, 2 tbsp rice vinegar, 1 tsp sesame oil, and 1/2 tsp chili flakes (if using) in a small bowl.
- Serve the hot steamed dumplings immediately with the dipping sauce.
