Spicy Sardine Sambal

  1. Carefully remove bones from sardines and set aside. Reserve the tomato sauce from the cans.
  2. Add onions, garlic, ginger, and dried chillies to the mixing bowl. Chop 5 sec / Speed 7. Scrape down sides of bowl.
  3. Add cooking oil and curry leaves to the mixing bowl. Sauté 8 min / 120°C / Speed 1 (Reverse).
  4. Add quartered tomatoes to the mixing bowl. Cook 5 min / 100°C / Speed 1 (Reverse) until softened.
  5. In a small bowl, combine chili powder, turmeric powder, cumin powder, fennel powder, and 50 g water to form a thick paste. Add this spice paste to the mixing bowl. Cook 7 min / 120°C / Speed 1 (Reverse) with the simmering basket on the lid instead of the measuring cup to allow evaporation and for the oil to separate.
  6. Add the reserved tomato sauce from the sardine cans, strained tamarind juice, sugar, and salt to taste. Cook 10 min / 95°C / Speed 2 (Reverse) with the simmering basket on the lid.
  7. Pause, scrape down the sides and bottom of the mixing bowl with the spatula, and check the consistency. If too thick, add a splash of water (up to 50g).
  8. Gently add the deboned sardines to the mixing bowl. Cook 2 min / 90°C / Speed 1 (Reverse) to heat through and combine without breaking the fish too much.
  9. Serve immediately with rice or bread.
