Spicy Plum Chutney

  1. Add 1 clove garlic, 1 peeled red onion, 1 deseeded red chili, and 1 cm peeled fresh ginger to the Thermomix bowl. Chop 5 sec / Speed 5. Scrape down the sides of the bowl with the spatula.
  2. Add 1 tbsp olive oil to the bowl. Sauté 5 min / 120°C / Speed 1.
  3. Add 500 g halved and pitted plums, 100 g brown sugar, 1 tsp mustard seeds, 1 pinch salt, and 4 whole cloves (for easy removal, place the cloves in a small tea bag or directly into the simmering basket and place it in the bowl).
  4. Cook 30 min / 95°C / Speed 2 / Reverse. Place the simmering basket on the lid instead of the measuring cup to allow steam to escape and prevent splatter.
  5. Pause, scrape down the sides and bottom of the bowl with the spatula. Check the consistency.
  6. Add 1 tbsp ginger syrup and 100 ml red wine vinegar. Cook another 60 min / 95°C / Speed 2 / Reverse. Continue to place the simmering basket on the lid.
  7. Pause, scrape down the sides and bottom of the bowl again. Cook 2 min / 90°C / Speed 1 / Reverse to settle the chutney and prevent sticking.
  8. Carefully remove the simmering basket (if used for cloves) or pick out the whole cloves from the chutney. Transfer the hot chutney into sterilized jars and seal immediately. Allow to cool completely before serving.
