Ingredients

Instructions

  1. Add onion to the mixing bowl. Chop 3 seconds / Speed 5. Transfer half of the chopped onion to a small bowl and set aside for the salsa. Leave the other half in the mixing bowl.
  2. Add 20 g olive oil to the mixing bowl with the remaining onion. Sauté 3 minutes / 120°C / Speed 1. Scrape down the sides of the bowl.
  3. Add the pangasius pieces, Mexican spice mix, salt, pepper, and finely sliced jalapeño (if using) to the mixing bowl. Cook 7 minutes / 95°C / Reverse / Speed 1. Pause after 3 minutes to scrape down the sides of the bowl and gently stir the fish. Ensure the fish is cooked through. Finish with 1 minute / 90°C / Reverse / Speed 1 to settle and prevent sticking. Transfer the cooked fish to a serving bowl and set aside.
  4. Clean and dry the mixing bowl thoroughly.
  5. Add the peeled and pitted avocado, diced kiwi, reserved half of the chopped onion, half of the chopped fresh coriander, lime juice from half a lime, sour cream, honey, salt, and pepper to the clean mixing bowl. Blend 10 seconds / Speed 6, or until a chunky salsa consistency is achieved. Transfer the avocado-kiwi salsa to a serving bowl.
  6. Add the shredded red cabbage to the mixing bowl. Add 10 g extra virgin olive oil, salt, and pepper. Mix 10 seconds / Reverse / Speed 2. Transfer to a serving bowl.
  7. Warm the mini tortillas in a dry pan over medium heat for 1-2 minutes per side, or microwave according to package instructions. Serve immediately.
  8. Arrange all components (warm tortillas, cooked fish, avocado-kiwi salsa, red cabbage, remaining fresh coriander, and lime wedges) separately for self-assembly.
