Smoky Aubergine Dip

Ingredients
- 2 large aubergines (approx. 700-800 g total)
- 2 cloves garlic
- 60 g tahini
- 30 g fresh lemon juice
- 30 g olive oil, plus extra for drizzling
- 1/2 tsp ground cumin
- 1/4 tsp smoked paprika (optional)
- 1/2 tsp salt, or to taste
- Pinch of black pepper
- Fresh parsley, chopped, for garnish
Instructions
- Preheat oven to 200°C (400°F). Pierce the aubergines several times with a fork. Place them on a baking tray and roast for 40-50 minutes, or until very soft and collapsed. Allow to cool slightly.
- Once cool enough to handle, cut the aubergines in half lengthwise and scoop out the flesh with a spoon, discarding the skin. Place the flesh in a fine-mesh sieve over a bowl for 10-15 minutes to drain any excess liquid.
- Add garlic cloves to the Thermomix bowl. Chop 3 sec / Speed 7. Scrape down the sides of the bowl.
- Add the drained aubergine flesh, tahini, lemon juice, olive oil, cumin, smoked paprika (if using), salt, and pepper to the Thermomix bowl.
- Blend 20 sec / Speed 6, or until smooth. Scrape down the sides and bottom of the bowl.
- Blend again 10 sec / Speed 7 to ensure a very smooth consistency. Taste and adjust seasoning if needed.
- Transfer the smoky aubergine dip to a serving bowl. Drizzle with a little extra olive oil and garnish with chopped fresh parsley before serving.
