Smoky Aubergine Dip

  1. Preheat oven to 200°C (400°F). Pierce the aubergines several times with a fork. Place them on a baking tray and roast for 40-50 minutes, or until very soft and collapsed. Allow to cool slightly.
  2. Once cool enough to handle, cut the aubergines in half lengthwise and scoop out the flesh with a spoon, discarding the skin. Place the flesh in a fine-mesh sieve over a bowl for 10-15 minutes to drain any excess liquid.
  3. Add garlic cloves to the Thermomix bowl. Chop 3 sec / Speed 7. Scrape down the sides of the bowl.
  4. Add the drained aubergine flesh, tahini, lemon juice, olive oil, cumin, smoked paprika (if using), salt, and pepper to the Thermomix bowl.
  5. Blend 20 sec / Speed 6, or until smooth. Scrape down the sides and bottom of the bowl.
  6. Blend again 10 sec / Speed 7 to ensure a very smooth consistency. Taste and adjust seasoning if needed.
  7. Transfer the smoky aubergine dip to a serving bowl. Drizzle with a little extra olive oil and garnish with chopped fresh parsley before serving.
