  1. Season the chicken breast pieces with a pinch of salt and pepper. Place them evenly into the Varoma dish and tray, ensuring there are gaps for steam to circulate. Set aside.
  2. Add garlic, ginger, and red chilli (if using) to the mixing bowl. Chop 3 sec / Speed 7. Scrape down the sides of the bowl with the spatula.
  3. Add vegetable oil to the mixing bowl. Sauté 3 min / 120°C / Speed 1. Remove the measuring cup and place the simmering basket on the lid to allow for evaporation.
  4. Add coconut milk, water, peanut butter, soy sauce, and brown sugar to the mixing bowl. Secure the Varoma with the chicken in place on top of the mixing bowl.
  5. Cook 15-18 min / Varoma / Speed 2 (Reverse). The chicken should be cooked through and the sauce should be simmering. Cooking time may vary depending on the thickness of the chicken.
  6. Carefully remove the Varoma and set the cooked chicken aside. Add the fresh lime juice to the sauce in the mixing bowl. Mix 30 sec / Speed 3 (Reverse).
  7. For the final touch, cook 1 min / 90°C / Speed 1 (Reverse) to ensure even distribution and prevent sticking. Taste and adjust seasoning if needed.
  8. Serve the chicken immediately, drizzled generously with the warm peanut sauce. This dish pairs well with steamed rice or noodles.
