Silky Carrot Sauce

Ingredients
- 500 g carrots, peeled and roughly chopped
- 1 small onion (approx. 100 g), peeled and quartered
- 2 cloves garlic, peeled
- 20 g olive oil or butter
- 300 ml vegetable stock
- 50 ml cooking cream (optional, for extra richness)
- ½ tsp salt, or to taste
- ¼ tsp black pepper, or to taste
Instructions
- Place onion and garlic in the Thermomix bowl. Chop 3 sec / Speed 5. Scrape down sides of bowl.
- Add 20 g olive oil or butter to the bowl. Sauté 5 min / 120°C / Speed 1.
- Add 500 g chopped carrots to the bowl. Sauté 3 min / 120°C / Speed 1. Remove measuring cup and place simmering basket on lid to allow steam to escape.
- Pour in 300 ml vegetable stock. Cook 15 min / 100°C / Speed 1. Pause, scrape down sides and bottom of the bowl to ensure even cooking, then continue cooking until carrots are very tender.
- Once carrots are tender, blend the mixture gradually increasing speed: 1 min / Speed 5-10, until completely smooth. Use the spatula through the lid opening if needed to assist blending.
- Add 50 ml cooking cream (if using), ½ tsp salt, and ¼ tsp black pepper. Mix 30 sec / Speed 4.
- To finish and prevent sticking, cook for a final 1 min / 90°C / Speed 1 (Reverse).
- Serve warm as a side dish, with grilled fish or chicken, or as a base for other sauces.
