Silky Carrot Sauce

  1. Place onion and garlic in the Thermomix bowl. Chop 3 sec / Speed 5. Scrape down sides of bowl.
  2. Add 20 g olive oil or butter to the bowl. Sauté 5 min / 120°C / Speed 1.
  3. Add 500 g chopped carrots to the bowl. Sauté 3 min / 120°C / Speed 1. Remove measuring cup and place simmering basket on lid to allow steam to escape.
  4. Pour in 300 ml vegetable stock. Cook 15 min / 100°C / Speed 1. Pause, scrape down sides and bottom of the bowl to ensure even cooking, then continue cooking until carrots are very tender.
  5. Once carrots are tender, blend the mixture gradually increasing speed: 1 min / Speed 5-10, until completely smooth. Use the spatula through the lid opening if needed to assist blending.
  6. Add 50 ml cooking cream (if using), ½ tsp salt, and ¼ tsp black pepper. Mix 30 sec / Speed 4.
  7. To finish and prevent sticking, cook for a final 1 min / 90°C / Speed 1 (Reverse).
  8. Serve warm as a side dish, with grilled fish or chicken, or as a base for other sauces.
