Savory Chicken and Vegetable Stir-fried Noodles

  1. If marinating, combine chicken with 1 tbsp soy sauce, 1 tsp cornflour, and 1 tsp sesame oil in a bowl. Set aside for at least 10 minutes.
  2. Cook the noodles according to package instructions in a separate pot. Drain, rinse with cold water to prevent sticking, and set aside.
  3. Add onion, garlic, and ginger to the clean, dry Thermomix bowl. Chop 5 sec / Speed 5. Scrape down sides of the bowl.
  4. Add 15 g cooking oil to the bowl. Sauté 3 min / 120°C / Speed 1.
  5. Add the marinated chicken to the bowl. Sauté 6-8 min / 120°C / Reverse / Speed 1, or until the chicken is cooked through. Remove chicken and aromatics from the bowl and set aside.
  6. Without cleaning the bowl, add all sauce ingredients (60 g soy sauce, 30 g oyster sauce, 15 g rice vinegar, 15 g sesame oil, 15 g brown sugar, 1 tsp cornflour, and 120 g water or chicken stock) to the bowl. Mix 10 sec / Speed 4.
  7. Cook the sauce 4 min / 90°C / Speed 2, or until slightly thickened. Remove the measuring cup and place the simmering basket on the lid to prevent splatter and allow some evaporation.
  8. Add carrots, bell pepper, broccoli florets, and snow peas to the bowl with the sauce. Cook 5-7 min / Varoma / Reverse / Speed 1, or until the vegetables are tender-crisp. Adjust time based on desired doneness.
  9. Add the cooked chicken and aromatics, and the pre-cooked noodles to the bowl with the vegetables and sauce. Add most of the sliced spring onions, reserving some for garnish. Gently combine 2 min / 90°C / Reverse / Speed 1-2, ensuring everything is well coated and heated through.
  10. Transfer the stir-fried noodles to a large serving dish. Garnish with the remaining spring onions and toasted sesame seeds, if desired. Serve immediately.
