Savory Bird's Nest with Minced Meat Filling

Ingredients
- 800 g potatoes, peeled and quartered
- 500 g water (for cooking potatoes)
- 50 g butter
- 50 g milk
- 1 tsp salt (for potatoes)
- Pinch of nutmeg
- 1 onion, halved
- 1 clove garlic
- 20 g olive oil
- 500 g minced beef (or mixed)
- 1 tsp salt (for filling)
- 0.5 tsp black pepper
- 1 tsp paprika powder
- 100 g frozen peas
- 100 g frozen carrots, diced
- 100 g tomato passata
- 100 g vegetable stock
- 1 tbsp fresh parsley, chopped (for garnish)
Instructions
- Place 500 g water into the mixing bowl. Insert the simmering basket. Add 800 g peeled and quartered potatoes into the simmering basket. Cook 25 min / Varoma / Speed 1.
- Carefully remove the simmering basket with the aid of the spatula. Discard the cooking water. Add the cooked potatoes, 50 g butter, 50 g milk, 1 tsp salt, and a pinch of nutmeg to the mixing bowl. Insert the butterfly whisk. Mash 20-30 sec / Speed 3. Remove butterfly whisk and set mashed potatoes aside in a large bowl. Clean mixing bowl.
- Add 1 onion, halved, and 1 clove garlic to the mixing bowl. Chop 3 sec / Speed 5. Scrape down sides of mixing bowl.
- Add 20 g olive oil. Sauté 3 min / 120°C / Speed 1.
- Add 500 g minced beef, 1 tsp salt, 0.5 tsp black pepper, and 1 tsp paprika powder. Cook 8 min / 120°C / Reverse / Speed 1, breaking up the meat with the spatula as needed.
- Add 100 g frozen peas, 100 g frozen carrots, 100 g tomato passata, and 100 g vegetable stock. Cook 10 min / 98°C / Reverse / Speed 2.
- Pause and scrape down the sides of the mixing bowl. Check thickness and adjust liquid if needed. Cook 2 min / 90°C / Reverse / Speed 1 to settle and prevent sticking.
- Preheat oven to 180°C (350°F). Line a baking tray with baking paper. Take portions of the mashed potato and form into small nests (about 10-12 cm diameter with an indentation in the center) on the prepared baking tray.
- Spoon the minced meat filling into the center of each potato nest. Bake for 10-15 minutes, or until the potato nests are lightly golden and heated through.
- Garnish with fresh chopped parsley and serve immediately.
