Ricotta and Broccoli Patties

Ingredients
- 300 g broccoli, cut into florets
- 300 g well-drained ricotta cheese
- 2 tbsp grated Parmesan cheese
- 2 tbsp breadcrumbs (for the mixture)
- 1 tsp garlic powder
- Salt, to taste
- Black pepper, to taste
- Approx. 2 tbsp breadcrumbs (for coating)
- Olive oil, for drizzling
- 500 g water (for steaming)
Instructions
- Preheat your oven to 220°C (425°F). Line a baking tray with baking paper and set aside.
- Add 500 g water to the mixing bowl. Place the broccoli florets in the Varoma dish. Secure the Varoma lid.
- Steam the broccoli for 15 minutes / Varoma / Speed 2. The broccoli should be very tender.
- Carefully remove the Varoma. Discard the water from the mixing bowl. Add the steamed broccoli to the clean, dry mixing bowl.
- Add the well-drained ricotta, 2 tbsp grated Parmesan cheese, 2 tbsp breadcrumbs, 1 tsp garlic powder, salt, and pepper to the bowl.
- Mix for 10 seconds / Speed 4, or until the mixture is well combined and the broccoli is mashed. Scrape down the sides of the bowl and mix again for 5 seconds / Speed 4 if needed.
- Transfer the mixture to a separate bowl. Take spoonfuls of the mixture and form them into small patties or balls. Roll each patty in the extra breadcrumbs for coating.
- Place the coated patties on the prepared baking tray. Drizzle a little olive oil over each patty.
- Bake in the preheated oven for 20 minutes, or until golden brown and crispy.
- Serve hot as a main dish, side, or snack.
