Rich Chocolate Mousse

Ingredients
- 200 g dark chocolate (70% cocoa), broken into pieces
- 50 g unsalted butter, cut into cubes
- 3 large eggs, separated
- 50 g caster sugar
- 200 ml heavy cream (35% fat)
- Pinch of salt
- Optional: 1 tsp vanilla extract
- Optional: 1 tbsp coffee liqueur
Instructions
- Add 200 g dark chocolate pieces and 50 g unsalted butter cubes to the clean, dry Thermomix bowl. Melt 5 min / 50°C / Speed 2. Scrape down the sides of the bowl with a spatula.
- Add the 3 egg yolks and 50 g caster sugar to the bowl (no need to wash the bowl after the chocolate). Mix 1 min / Speed 3. Scrape down the sides.
- Mix for 30 sec / Speed 3 to thoroughly combine the chocolate and yolk mixture. Transfer this mixture to a large separate mixing bowl and set aside to cool slightly. Wash and thoroughly dry the Thermomix bowl and butterfly whisk.
- Insert the butterfly whisk into the clean, dry Thermomix bowl. Add 200 ml heavy cream. Whip 1-2 min / Speed 3.5, or until soft peaks form. Monitor carefully to avoid over-whipping. Remove the butterfly whisk.
- Gently fold the whipped cream into the cooled chocolate mixture in the separate bowl using a spatula. If using, add 1 tsp vanilla extract or 1 tbsp coffee liqueur at this stage and gently fold in.
- Insert the clean butterfly whisk into the clean, dry Thermomix bowl. Add the 3 egg whites and a pinch of salt. Whip 3-4 min / Speed 3.5, or until stiff peaks form. Remove the butterfly whisk.
- Gently fold the whipped egg whites into the chocolate and cream mixture in two additions, using a spatula. Be careful not to deflate the mixture, as this will ensure a light and airy mousse.
- Divide the mousse into 4 serving glasses or ramekins. Chill in the refrigerator for at least 4 hours, or preferably overnight, before serving.
- Garnish with chocolate shavings or a dusting of cocoa powder, if desired, just before serving.
