Quilhõezinhos de São Gonçalo

Ingredients
- 300 ml milk
- 20 g fresh baker's yeast
- 800 g plain flour, plus extra for dusting
- 80 g caster sugar
- 50 g unsalted butter, softened
- 2 medium eggs
- 200 g powdered sugar
- 1 medium egg white
- Pinch of salt
Instructions
- Add 300 ml milk to the Thermomix bowl. Heat 2 min / 37°C / Speed 1.
- Add 20 g fresh baker's yeast to the bowl. Mix 5 sec / Speed 3 to dissolve.
- Add 800 g plain flour, 80 g caster sugar, 50 g softened unsalted butter, and 2 medium eggs to the bowl. Knead 3 min / Dough mode.
- Transfer the dough to a lightly floured surface. Divide the dough into 6 equal portions and shape them into small buns or the traditional 'quilhõezinhos' shape.
- Place the shaped dough on baking trays lined with parchment paper and lightly dusted with flour. Cover with a clean kitchen cloth and let rise in a warm place for 1 hour, or until doubled in size.
- Preheat your oven to 180°C (350°F).
- Bake the risen buns for 25 minutes, or until golden brown. Once baked, remove from the oven and let cool slightly on a wire rack.
- While the buns are cooling, clean and thoroughly dry the Thermomix bowl. Insert the butterfly whisk.
- Add 1 medium egg white and a pinch of salt to the bowl. Whisk 2 min / Speed 3.5, or until soft peaks form.
- Gradually add 200 g powdered sugar through the lid opening while whisking 1-2 min / Speed 3.5, until a thick, glossy glaze forms.
- Once the quilhõezinhos have cooled slightly, spread the prepared glaze generously over each bun. Allow the glaze to set and dry completely before serving.
