Quick Family Chicken Potpie

Ingredients
- 1 sheet (approx. 320 g) ready-rolled puff pastry
- 1 tbsp olive oil
- 1 small onion, quartered
- 1 clove garlic
- 200 g chicken breast, cut into 1.5 cm cubes
- 100 g carrots, peeled and diced into small cubes
- 100 g frozen peas
- 100 g frozen corn
- 40 g plain flour
- 300 g chicken stock
- 200 g milk (full-fat recommended)
- 1 tsp dried thyme
- Salt to taste
- Freshly ground black pepper to taste
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Preheat your oven to 200°C (180°C fan). Unroll the puff pastry and cut it into 4 equal squares or circles. Place them on a baking sheet and bake for 10-12 minutes, or until golden brown and puffed. Set aside.
- Add the quartered onion and garlic clove to the Thermomix bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl with the spatula.
- Add 1 tbsp olive oil to the bowl. Sauté 3 min / 120°C / Speed 1.
- Add the chicken cubes and diced carrots to the bowl. Sauté 5 min / 100°C / Reverse / Speed 1.
- Add 40 g plain flour to the bowl. Cook 1 min / 100°C / Reverse / Speed 1 to cook out the raw flour taste.
- Add 300 g chicken stock, 200 g milk, 1 tsp dried thyme, salt, and pepper to the bowl. Place the simmering basket on the lid instead of the measuring cup to allow for evaporation. Cook 10 min / 95°C / Reverse / Speed 2.
- Pause the Thermomix. Scrape down the sides and bottom of the bowl with the spatula to ensure even cooking and prevent sticking. Check the consistency and adjust liquid if needed.
- Add 100 g frozen peas and 100 g frozen corn to the bowl. Cook 2 min / 90°C / Reverse / Speed 1.
- To ensure even distribution and prevent any sticking, perform a final stir: Cook 1 min / 90°C / Reverse / Speed 1-2.
- Ladle the hot chicken and vegetable filling into individual serving bowls. Top each serving with one of the baked puff pastry squares. Garnish with fresh chopped parsley if desired, and serve immediately.
