- 600 g cold heavy cream (35% fat)
- 385 g cooked condensed milk (dulce de leche, 1 can)

- Add the zest of 1 orange (ensure no white pith) to the clean, dry mixing bowl. Chop 5-10 sec / Speed 7-10 until very fine. Transfer to a small bowl and set aside.
- Insert the butterfly whisk into the clean, dry mixing bowl. Add 600 g cold heavy cream. Whip on Speed 3 until firm, observing carefully through the lid. This typically takes 1-2 minutes, but can vary depending on cream temperature and fat content. Do not over-whip.
- Remove the butterfly whisk. Add 385 g cooked condensed milk (dulce de leche) to the mixing bowl. Gently mix 15-20 sec / Reverse / Speed 2, or until just combined and homogeneous. Avoid overmixing to maintain the airy texture of the mousse.
- Divide the mousse into individual serving glasses or a large dessert bowl. Refrigerate for at least 2 hours, or until firm.
