Potato Naan Bread with Mozzarella

Ingredients
- 240 g potatoes, peeled and diced (approx. 2 cm)
- 600 g water (for steaming)
- 4 g salt
- 25 g unsalted butter, softened (for dough)
- 75 g mozzarella cheese, grated
- 30 ml milk
- 16 g baking powder
- 200 g plain flour, plus extra for dusting
- 20 g unsalted butter, melted (for brushing)
Instructions
- Peel and dice the 240 g potatoes into approximately 2 cm pieces. Place them into the simmering basket.
- Pour 600 g water into the mixing bowl. Insert the simmering basket with the diced potatoes. Cook for 20 min / Varoma / Speed 2, or until the potatoes are tender when pierced with a fork.
- Carefully remove the simmering basket and set the cooked potatoes aside. Discard the water from the mixing bowl.
- Add the cooked potatoes, 4 g salt, 25 g softened butter, 30 ml milk, 16 g baking powder, and 200 g plain flour to the mixing bowl. Knead for 2 min / Dough mode.
- Transfer the dough to a lightly floured surface. Form it into a ball, cover with a clean kitchen towel, and let it rest for 10 minutes.
- While the dough rests, grate the 75 g mozzarella cheese if not already grated.
- Divide the rested dough into 6 equal portions. Take one portion and flatten it slightly. Place a spoonful of grated mozzarella in the center. Gather the edges of the dough to enclose the cheese, sealing it completely.
- Gently flatten the filled dough ball and roll it out on a lightly floured surface into an oval or round shape, about 0.5 cm thick.
- Heat a non-stick frying pan or griddle over medium-high heat. Cook each naan bread for 2-3 minutes per side, or until golden brown and puffed up. Repeat with the remaining dough portions.
- While the naan breads are cooking, melt the remaining 20 g butter in a small saucepan on the stovetop, or in the Thermomix for 1 min / 60°C / Speed 1.
- Once cooked, brush each warm potato naan bread with the melted butter. Serve immediately.
