Portuguese Pork Sandwiches (Bifanas)

  1. Peel the garlic cloves. Place them in the Thermomix bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl.
  2. Transfer the chopped garlic to a large bowl. Add the pork cutlets, white beer, bay leaf, salt, and piripiri. Mix well to combine. Let marinate for at least 30 minutes (or longer in the refrigerator).
  3. Add the olive oil and butter to the Thermomix bowl. Heat 2 min / 120°C / Speed 1.
  4. Add the marinated pork cutlets and all the marinade liquid to the Thermomix bowl. Remove the measuring cup and place the simmering basket on the lid to prevent splatter. Cook 15 min / 95°C / Reverse / Speed 1.
  5. Pause, scrape down the sides and bottom of the bowl with the spatula. Check the consistency of the sauce and the doneness of the pork. Continue cooking for another 5 min / 95°C / Reverse / Speed 1, or until the pork is tender and cooked through.
  6. For the last 1 minute, cook 1 min / 90°C / Reverse / Speed 1 to settle the sauce and prevent sticking.
  7. Carefully transfer the cooked pork and sauce to a serving dish. Cut the bread rolls in half. Drizzle the cut sides of the bread with some of the delicious sauce, then fill each roll with the cooked pork cutlets.
  8. Serve immediately, garnished as desired.
