Portuguese Green Soup (Caldo Verde)

Ingredients
- 30 g olive oil
- 150 g onion, quartered
- 2 cloves garlic
- 600 g potatoes, peeled and quartered
- 800 g water or vegetable broth
- 1 tsp salt
- 1/4 tsp black pepper
- 150 g chorizo, thinly sliced
- 200 g kale (or collard greens), tough stems removed, thinly sliced/shredded
Instructions
- Add onion and garlic to the mixing bowl. Chop 5 sec / Speed 5. Scrape down sides of the bowl with the spatula.
- Add 30 g olive oil. Sauté 5 min / 120°C / Speed 1.
- Add 600 g potatoes, 800 g water (or broth), 1 tsp salt, and 1/4 tsp black pepper to the mixing bowl. Place the simmering basket on the mixing bowl lid instead of the measuring cup to allow for evaporation. Cook 20 min / 100°C / Speed 1.
- Pause the machine. Scrape down the sides and bottom of the mixing bowl with the spatula. Check if the potatoes are tender. If not, cook for another 3-5 minutes at 100°C / Speed 1.
- Carefully remove the simmering basket. Blend the soup 1 min / Speed 7, gradually increasing speed from 1 to 7.
- Add 200 g thinly sliced kale to the mixing bowl. Cook 5 min / 90°C / Speed 1 / Reverse.
- Add 150 g thinly sliced chorizo. Cook 2 min / 90°C / Speed 1 / Reverse to heat through and combine.
- Taste and adjust seasoning if necessary. Serve hot, drizzled with a little extra olive oil if desired. For the last 1-2 minutes, cook at 90°C / Speed 1 / Reverse to settle and prevent sticking.
