  1. Add onion and garlic to the mixing bowl. Chop 5 sec / Speed 5. Scrape down sides of bowl.
  2. Add diced bacon to the mixing bowl. Sauté 8 min / 120°C / Speed 1 / Reverse. Transfer bacon to a separate bowl, leaving the rendered fat in the mixing bowl.
  3. Add diced sausage to the mixing bowl. Sauté 7 min / 120°C / Speed 1 / Reverse. Add the sautéed bacon back into the bowl with the sausage. Scrape down sides of bowl.
  4. Add the chopped onion and garlic back into the mixing bowl with the bacon and sausage. Sauté 5 min / 120°C / Speed 1 / Reverse.
  5. Add the undrained canned beans, chopped tomatoes, tomato paste, allspice berries, bay leaf, dried marjoram, and 100 g water or stock (if using) to the mixing bowl. Season with salt and pepper. Place the simmering basket on the lid instead of the measuring cup to prevent splatters and allow for evaporation.
  6. Cook 20 min / 98°C / Speed 1 / Reverse. Pause halfway through (after 10 minutes) to scrape down the sides and bottom of the bowl with the spatula, ensuring nothing sticks. Check consistency and add a little more water if it's too thick.
  7. Continue cooking for the remaining time. After cooking, remove the bay leaf and allspice berries.
  8. For the last 2 min, cook 90°C / Speed 1 / Reverse to settle the mixture and prevent sticking.
  9. Serve hot, garnished with fresh marjoram or parsley if desired.
