Piadina with Prosciutto and Soft Cheese

Ingredients
- 250 g plain flour
- 5 g baking soda
- 5 g salt
- 30 g lard (or olive oil for a lighter version)
- 100-120 g warm water
- 100 g soft cheese (e.g., stracchino, squacquerone, or fresh mozzarella)
- 80-100 g prosciutto crudo
Instructions
- Add 250 g plain flour, 5 g baking soda, and 5 g salt to the mixing bowl. Mix 10 sec / Speed 5.
- Add 30 g lard (or olive oil) and 100-120 g warm water to the bowl. Knead for 2 min / Dough mode.
- Remove the dough from the bowl, form it into a ball, cover it with cling film or a damp cloth, and let it rest at room temperature for at least 30 minutes.
- Divide the rested dough into 2 equal portions. On a lightly floured surface, roll out each portion into a thin, round flatbread (approx. 20-25 cm diameter).
- Heat a non-stick frying pan or griddle over medium-high heat. Cook one piadina at a time for 2-3 minutes on each side, until golden spots appear and the piadina is cooked through.
- As soon as each piadina is cooked and still warm, spread half of the 100 g soft cheese over one half of the piadina. Top with half of the 80-100 g prosciutto crudo.
- Fold the piadina in half and serve immediately. Repeat with the second piadina.
