  1. Preheat oven to 200°C (400°F) according to frozen fries package instructions. Arrange fries on a baking tray and bake for 20-25 minutes, or until golden and crispy.
  2. Pat the steaks dry with paper towels and season generously with salt and pepper on both sides. Set aside at room temperature.
  3. Add onion and garlic to the Thermomix bowl. Chop 3 sec / Speed 5. Scrape down sides of bowl.
  4. Add 20 g olive oil to the bowl. Sauté 3 min / 120°C / Speed 1.
  5. Add sliced mushrooms to the bowl. Cook 5 min / 100°C / Speed 1 (Reverse), placing the simmering basket on the lid instead of the measuring cup to allow steam to escape.
  6. While the mushrooms are cooking in the Thermomix, heat 1 tbsp olive oil in a large frying pan over high heat until shimmering. Carefully place the seasoned steaks in the hot pan.
  7. Sear steaks for 2-3 minutes per side for medium-rare, or longer for desired doneness. Once cooked, transfer steaks to a cutting board, tent loosely with foil, and let rest for 5-10 minutes.
  8. Add beef stock to the Thermomix bowl. Cook 5 min / 100°C / Speed 1 (Reverse), with the simmering basket on the lid.
  9. Add cooking cream to the bowl. Season with salt and pepper to taste. Cook 2 min / 90°C / Speed 2 (Reverse) to slightly thicken the sauce.
  10. Divide the crispy fries among plates. Slice the rested steak against the grain and serve with the creamy mushroom sauce. Garnish with fresh parsley.
