One Pan Salmon with Roasted Vegetables

Ingredients
- 250 g salmon fillets (2 x approx. 125g)
- 6 sprigs fresh oregano
- 2 organic limes
- 1 garlic clove
- Salt, to taste
- Black pepper, to taste
- 300 g firm potatoes, peeled
- 100 g cherry tomatoes
- 6 shallots or 2 small onions, peeled
- 3 tbsp olive oil, divided
- Optional: Spices to taste (e.g., paprika, chili flakes)
Instructions
- Wash salmon fillets and pat dry with kitchen paper. Set aside.
- Wash 6 sprigs of fresh oregano and 2 limes. Peel 1 garlic clove. Set aside.
- Add leaves from 3 sprigs of oregano and the peeled garlic clove to the Thermomix bowl. Chop 3 sec / Speed 7. Scrape down sides of the bowl with a spatula.
- Add juice of 1 lime, 1 tbsp olive oil, a pinch of salt, and a pinch of pepper to the bowl. Mix 5 sec / Speed 3.
- Brush the prepared marinade evenly over the salmon fillets. Place them in a shallow dish and let marinate in the refrigerator for at least 30 minutes.
- While the salmon marinates, slice the peeled potatoes into approximately 0.5 cm thick rounds. Place the potato slices into the simmering basket.
- Add 500 g water to the Thermomix bowl. Insert the simmering basket with the potatoes. Cook 10-12 min / Varoma / Speed 1, or until the potatoes are slightly tender but still firm. Carefully remove the simmering basket and set the potatoes aside. Discard the water from the bowl.
- Preheat your oven to 180°C (fan-forced/convection). Line a large baking sheet with baking paper.
- Add the remaining oregano leaves (from 3 sprigs) and the peeled, quartered shallots to the clean Thermomix bowl. Chop 3 sec / Speed 5. Scrape down the sides of the bowl.
- Transfer the chopped shallots and oregano to a large mixing bowl. Add the par-cooked potato slices, quartered cherry tomatoes, 2 tbsp olive oil, salt, pepper, and any optional spices (e.g., paprika, chili flakes). Mix everything well by hand to coat.
- Spread the vegetable mixture evenly in a single layer on the prepared baking sheet. Bake in the preheated oven for 15 minutes.
- After 15 minutes, carefully remove the baking sheet from the oven. Gently turn the vegetables with a spatula. Place the marinated salmon fillets on top of the vegetables.
- Return the baking sheet to the oven and bake for another 10-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Remove from the oven. Halve the remaining lime. Serve immediately, drizzling with fresh lime juice from the remaining lime halves as desired.
