Nutella-Filled Shortbread Cookies

Ingredients
- 150 g unsalted butter, softened, cut into cubes
- 90 g powdered sugar
- 1 large egg yolk
- 1 teaspoon vanilla extract
- 250 g plain flour
- Pinch of salt
- 180 g Nutella, chilled slightly for easier handling
Instructions
- Add 150 g softened butter and 90 g powdered sugar to the Thermomix bowl. Mix 30 sec / Speed 4 until creamy.
- Add 1 large egg yolk and 1 teaspoon vanilla extract. Mix 15 sec / Speed 3.
- Add 250 g plain flour and a pinch of salt. Mix 30 sec / Speed 4, or until a dough forms. If needed, use Dough mode for 1 minute.
- Gather the dough, flatten it into a disc, wrap in cling film, and refrigerate for at least 30 minutes.
- Preheat oven to 180°C (350°F). Line two baking trays with parchment paper.
- On a lightly floured surface, roll out the chilled dough to about 3-4 mm thickness.
- Using a round cookie cutter (approx. 5 cm diameter), cut out an even number of circles.
- Place half of the dough circles on the prepared baking trays. Spoon about 1 teaspoon of chilled Nutella onto the center of each circle.
- Cover each Nutella-topped circle with another plain dough circle. Gently press the edges together to seal, ensuring the Nutella is fully enclosed. You can use a fork to crimp the edges for a decorative look and better seal.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Let the cookies cool on the baking trays for a few minutes before transferring them to a wire rack to cool completely.
