Nutella-Filled Grisbi Cookies

Ingredients
- 120 g unsalted butter, cold, cut into cubes
- 100 g icing sugar
- 1 large egg yolk
- 20 g unsweetened cocoa powder
- 200 g plain flour
- Pinch of salt
- 150-200 g Nutella, for filling
- Icing sugar, for dusting (optional)
Instructions
- Add 120 g cold unsalted butter (cut into cubes), 100 g icing sugar, 1 large egg yolk, 20 g unsweetened cocoa powder, 200 g plain flour, and a pinch of salt to the Thermomix bowl. Mix 20 sec / Speed 4 until a dough forms.
- Gather the dough, flatten it into a disc, wrap tightly in cling film, and chill in the refrigerator for at least 30 minutes. This helps prevent spreading during baking.
- Preheat your oven to 180°C (350°F). Line two baking trays with parchment paper.
- On a lightly floured surface, roll out the chilled dough to an even thickness of about 3-4 mm. Using a round cookie cutter (approx. 5-6 cm diameter), cut out an even number of dough circles (you should get about 20-24 circles).
- Place half of the dough circles on the prepared baking trays. Spoon about 1-1.5 teaspoons of Nutella onto the center of each cookie, leaving a small border around the edge.
- Place the remaining dough circles on top of the Nutella-filled ones. Gently press the edges of the top and bottom cookies together to seal them completely, ensuring the Nutella is enclosed. You can use a fork to crimp the edges for a decorative finish and a better seal.
- Bake for 12-15 minutes, or until the edges are lightly golden and the cookies are set. They will still be soft when hot but will firm up as they cool.
- Let the cookies cool on the baking trays for a few minutes before carefully transferring them to a wire rack to cool completely. Dust with a little extra icing sugar before serving, if desired.
