Ingredients

Instructions

  1. Add 120 g cold unsalted butter (cut into cubes), 100 g icing sugar, 1 large egg yolk, 20 g unsweetened cocoa powder, 200 g plain flour, and a pinch of salt to the Thermomix bowl. Mix 20 sec / Speed 4 until a dough forms.
  2. Gather the dough, flatten it into a disc, wrap tightly in cling film, and chill in the refrigerator for at least 30 minutes. This helps prevent spreading during baking.
  3. Preheat your oven to 180°C (350°F). Line two baking trays with parchment paper.
  4. On a lightly floured surface, roll out the chilled dough to an even thickness of about 3-4 mm. Using a round cookie cutter (approx. 5-6 cm diameter), cut out an even number of dough circles (you should get about 20-24 circles).
  5. Place half of the dough circles on the prepared baking trays. Spoon about 1-1.5 teaspoons of Nutella onto the center of each cookie, leaving a small border around the edge.
  6. Place the remaining dough circles on top of the Nutella-filled ones. Gently press the edges of the top and bottom cookies together to seal them completely, ensuring the Nutella is enclosed. You can use a fork to crimp the edges for a decorative finish and a better seal.
  7. Bake for 12-15 minutes, or until the edges are lightly golden and the cookies are set. They will still be soft when hot but will firm up as they cool.
  8. Let the cookies cool on the baking trays for a few minutes before carefully transferring them to a wire rack to cool completely. Dust with a little extra icing sugar before serving, if desired.
