Nut-Free Chocolate Protein Energy Bites

Ingredients
- 100 g rolled oats (gluten-free if preferred)
- 30 g pepitas (pumpkin seeds)
- 30 g sunflower seeds
- 100 g pitted Medjool dates (approx. 10 dates)
- 50 g sultanas
- 25 g cocoa powder
- 30 g protein powder (unflavored or chocolate)
- 5 ml vanilla extract
- 50 g coconut oil, melted (optional, if mixture is too dry)
- 30 g desiccated coconut, for rolling (optional)
Instructions
- Add rolled oats, pepitas, and sunflower seeds to the clean, dry Thermomix bowl. Mill 10 sec / Speed 10. Scrape down sides of bowl.
- Add pitted Medjool dates, sultanas, cocoa powder, protein powder, and vanilla extract to the bowl.
- Blend 30 sec / Speed 8. Scrape down sides of bowl.
- Continue blending 30 sec / Speed 8. Check consistency. If the mixture is too dry and not coming together into a sticky dough, add the melted coconut oil and blend for another 20 sec / Speed 8.
- Transfer the mixture to a bowl. Scoop out small portions (about 1 tablespoon each) and roll them into firm balls with your hands.
- If desired, roll each ball in desiccated coconut to coat.
- Place the finished energy bites on a plate or in an airtight container and store in the freezer for at least 30 minutes to firm up, then transfer to the refrigerator or continue storing in the freezer.
