Nut-Free Chocolate Energy Balls

Ingredients
- 100 g pitted Medjool dates (approx. 10)
- 100 g rolled oats
- 50 g sultanas
- 30 g pepitas (pumpkin seeds)
- 30 g sunflower seeds
- 25 g cacao powder
- 1 tsp vanilla extract
- 50 g shredded coconut (for rolling, optional)
- 50 g coconut oil (optional, if mixture is too dry)
Instructions
- Add 100 g rolled oats, 30 g pepitas, and 30 g sunflower seeds to the mixing bowl. Process 10 sec / Speed 8 to break them down slightly. Scrape down the sides of the bowl.
- Add 100 g pitted Medjool dates, 50 g sultanas, 25 g cacao powder, and 1 tsp vanilla extract to the mixing bowl. Process 20-30 sec / Speed 7, or until the mixture comes together into a sticky dough. Use the spatula through the lid opening to assist if needed.
- Pause and scrape down the sides and bottom of the mixing bowl with the spatula. Check the consistency. If the mixture appears too dry and crumbly, add 50 g coconut oil and process for another 10-15 sec / Speed 7.
- Once the mixture is well combined and sticky enough to hold its shape, remove it from the mixing bowl.
- Roll small portions of the mixture into bite-sized balls (approx. 12-15 balls).
- If desired, place 50 g shredded coconut in a shallow dish and roll each ball in the coconut to coat evenly.
- Store the energy balls in an airtight container in the refrigerator for up to 1 week, or in the freezer for up to 1 month.
