  1. Add 100 g rolled oats, 30 g pepitas, and 30 g sunflower seeds to the mixing bowl. Process 10 sec / Speed 8 to break them down slightly. Scrape down the sides of the bowl.
  2. Add 100 g pitted Medjool dates, 50 g sultanas, 25 g cacao powder, and 1 tsp vanilla extract to the mixing bowl. Process 20-30 sec / Speed 7, or until the mixture comes together into a sticky dough. Use the spatula through the lid opening to assist if needed.
  3. Pause and scrape down the sides and bottom of the mixing bowl with the spatula. Check the consistency. If the mixture appears too dry and crumbly, add 50 g coconut oil and process for another 10-15 sec / Speed 7.
  4. Once the mixture is well combined and sticky enough to hold its shape, remove it from the mixing bowl.
  5. Roll small portions of the mixture into bite-sized balls (approx. 12-15 balls).
  6. If desired, place 50 g shredded coconut in a shallow dish and roll each ball in the coconut to coat evenly.
  7. Store the energy balls in an airtight container in the refrigerator for up to 1 week, or in the freezer for up to 1 month.
