No Mayo Coleslaw with Fennel and Apple

Ingredients
- 900 g green cabbage, quartered
- 1 medium fennel bulb (approx. 250 g), trimmed and quartered
- 1 red apple (approx. 180 g), cored and quartered
- 30 g fresh dill leaves, roughly chopped
- 2 tsp caraway seeds
- 2 small cloves garlic (approx. 6 g), peeled
- 3 tbsp apple cider vinegar (approx. 45 ml)
- 5 tbsp olive oil (approx. 75 ml)
- 2 tsp Dijon mustard
- 1 1/2 tsp caster sugar
- 1/2 tsp salt
- 1/8 tsp black pepper
Instructions
- Add 2 small cloves garlic, 3 tbsp apple cider vinegar, 5 tbsp olive oil, 2 tsp Dijon mustard, 1 1/2 tsp caster sugar, 1/2 tsp salt, and 1/8 tsp black pepper to the clean and dry Thermomix bowl. Mix 15 sec / Speed 5. Transfer the dressing to a small bowl and set aside. Clean and dry the Thermomix bowl.
- Place half of the quartered green cabbage (approx. 450 g) into the Thermomix bowl. Chop 3 sec / Speed 4. Transfer the chopped cabbage to a very large mixing bowl.
- Place the remaining quartered green cabbage (approx. 450 g) into the Thermomix bowl. Chop 3 sec / Speed 4. Add to the large mixing bowl with the first batch of cabbage.
- Place the quartered fennel bulb into the Thermomix bowl. Chop 3 sec / Speed 4. Add to the large mixing bowl.
- Place the cored and quartered red apple into the Thermomix bowl. Chop 3 sec / Speed 4. Add to the large mixing bowl.
- Add the 30 g roughly chopped fresh dill leaves to the large mixing bowl containing the chopped vegetables.
- Pour the prepared dressing over the chopped vegetables and dill in the large mixing bowl. Toss thoroughly to combine all ingredients.
- Sprinkle the 2 tsp caraway seeds over the coleslaw in the large mixing bowl. Toss again to ensure even distribution.
- Cover the bowl and set aside for at least 1 hour at room temperature to allow the cabbage to soften and the flavours to meld. Give it a good toss before transferring to a serving bowl and serving.
