Moroccan Lamb Couscous

  1. Place onion and garlic into the mixing bowl. Chop 5 sec / Speed 5. Scrape down the sides of the bowl.
  2. Add olive oil. Sauté 5 min / 120°C / Speed 1. Remove the measuring cup and place the simmering basket on the lid to allow for evaporation.
  3. Add the lamb cubes. Cook 8 min / 120°C / Reverse / Speed 1. Remove the simmering basket and set aside the lamb in a separate bowl.
  4. Add cumin, coriander, turmeric, ginger, cinnamon, paprika, and cayenne pepper (if using) to the mixing bowl. Cook 1 min / 120°C / Speed 1 to toast the spices.
  5. Add tomato paste, canned chopped tomatoes, stock, rinsed chickpeas, and carrots to the mixing bowl. Return the lamb to the bowl. Season with salt and pepper. Place the simmering basket on the lid instead of the measuring cup.
  6. Place the couscous, boiling water, and salt into the Varoma dish. Stir gently to combine. Place the Varoma dish onto the mixing bowl.
  7. Cook 30 min / Varoma / Reverse / Speed 2. The stew will simmer while the couscous steams.
  8. Carefully remove the Varoma. Pause the machine. Scrape down the sides and bottom of the mixing bowl with the spatula to ensure even cooking and prevent sticking. Add the zucchini to the stew.
  9. Place the Varoma back onto the mixing bowl. Cook for a further 10 min / Varoma / Reverse / Speed 2.
  10. Carefully remove the Varoma. Transfer the couscous to a serving bowl and fluff with a fork. Cover to keep warm.
  11. Check the lamb stew for tenderness and adjust seasoning if needed. Cook for a final 2 min / 90°C / Reverse / Speed 1-2 to settle and prevent sticking.
  12. Serve the Moroccan Lamb Couscous hot, garnished with fresh chopped coriander or parsley.
